The following sections describe simple meals that are based on popular Thanksgiving foods. Make a Turkey Casserole, a Turkey Panini, or Turkey RisottoFor a spin on a classic Thanksgiving staple, college students can make turkey dishes using other foods that are often found on the Thanksgiving table. Students with full kitchens can prepare turkey casseroles that include stuffing and vegetables. They can also prepare turkey risotto that includes their favorite Thanksgiving sides, like cranberries and mushrooms. Students with limited kitchen resources can make a turkey panini with cranberry relish. Bake Pumpkin Seeds, Pumpkin Pie, or Make Pumpkin SoupFor a quick Thanksgiving snack, students can bake pumpkin seeds. If students don’t have access to a conventional oven, then they can bake the seeds using a toaster oven. And, for an easy dessert, students can bake pumpkin pie, using pre-made crust and pie filling. Students can simply omit the crust for gluten-intolerant Thanksgiving guests. Also, students can also make pumpkin soup using canned pumpkin. Prepare a Thanksgiving Vegetable Dish: Carrots or Green Bean CasseroleStudents can prepare classic Thanksgiving vegetable dishes, such as carrots and green bean casserole. Students who only have access to a microwave can steam baby carrots or heat them with butter. They can also sprinkle them with breadcrumbs or Parmesan cheese. And, if a student has an oven, then he or she can make green bean casserole, using canned mushroom soup and crunchy onions. Make a Potato Casserole, Marshmallow Yams, or Thanksgiving Potato HashStudents with access to ovens can make potato casseroles and yams. For a potato casserole, students can be creative and add their Thanksgiving favorites, such as diced turkey, onions, and gravy. For baked yams, students can add marshmallows or simply bake a yam in a microwave and add the necessary sugar ingredients. Students with access to stoves can make a Thanksgiving potato hash that includes chopped turkey, onions, and peppers. From potatoes to pumpkins, and everything in between, there are several Thanksgiving-inspired foods that college students can make. Students with access to an oven can make turkey and potato casseroles, a pumpkin pie, and even pumpkin soup.
